Cut & Barrel
Budapest
Consider making a reservation, as the unique appeal and recognition may lead to a lively dining crowd, especially on weekends.
Located in the Óbuda district, Cut & Barrel offers a unique dining experience within the imposing industrial setting of an old textile factory. This bistro specializes in salumeria and vineria, blending Basque and Latin American culinary traditions into what is described as 'contact cuisine'. This fusion brings together ingredients and techniques that emphasize community and connection, reflected in both their food philosophy and the ambience of the restaurant.
The space itself mirrors the innovation found in their menu with its contemporary design that pays homage to the building's historical roots. Patrons can expect a sophisticated yet welcoming atmosphere where good food and wine take center stage. Known for its steaks and South American dishes, Cut & Barrel is perfect for those who appreciate high-quality meats prepared using modern techniques. The chef, of Brazilian-Portuguese descent, brings extensive international fine dining experience, enriching the menu with his diverse culinary influences.
The restaurant's commitment to seasonal and local ingredients ensures a menu that is both fresh and varied, with a focus on smoky flavors that complement the wine selection rather than overshadow it. Cut & Barrel is an ideal spot for dining in Budapest whether one is looking for a relaxed meal with friends or a more intimate culinary adventure.

Okay I attended during one of diningcity's promos. Therefore we didn't pay full price, fortunately. So I myself don't feel too aggrieved but nor can I really say I didn't leave with a slightly bad taste in my mouth - figuratively anyway. The good: The primary courses were all pretty good. The way they cook steak won't be to everyone's taste, but it was juicy and flavourful, one or two chewy bits but nothing inedible. Rice was very nice. Tartare was good too - slightly more piquant than some might like but this is the modern style I guess. Though melba toasts were almost as much hole as toast, & I had to dip into my charcuterie bread allowance. Charcuterie was mostly good though I would have balked at full menu price. Desserts weree indeed decent. Not legendary, but more than fine. The bad: We ordered two of the extra offer starters. Both were fairly poor shows. Tuna tataki. My palate was exploded off the bat with a soy bomb. Once you got through that to the tuna and avo it balanced out a bit but, frankly, this is a poorly designed dish. Which given it is listed as a house speciality is hard to get past. Additionally, soy sauce dripped all over the plate I was supposed to use for the rest of my starters. I mopped it up using a serviette (a serviette that was later cleared and not replaced until prompted), but the whole family style but was ill-conceived with regards to this dish. Pulled duck talo: The corn tortilla was nice, duck meat moist, but this felt like it was missing a couple of things e.g. herbs and crema, and as a result was quite dull and lifeless. I would also say the lemonades were quite poor. Maybe they don't get many orders idk but most other restaurants in Budapest do better. The ugly: So the double-tipping game was played, but with an egregious twist. Server who didn't speak Hungarian presenting tip menu on card machine in Hungarian to non-Hungarian speaker. Service of 15% had already been included. I don't think this is remotely acceptable. Now, again, I wasn't paying full price so I walk away slightly annoyed but with a full belly. They do the basics reasonably well, but standards across the board are not really at the level one might expect from their full menu prices imho. Of course, bad days happen, your mileage may vary etc etc. But double tipping like that is a major red flag, & one that leaves me unable to recommend them. Edit' The platitudes offered by the restaurant below don't really address the double tipping issue. Tbh I think Michelin Guide &c should be taking a harder stance on this and I will be writing to them to say so.
Cut & Barrel was an incredible experience from start to finish. The food was outstanding, with beautifully presented dishes full of flavor and high-quality ingredients. The atmosphere is stylish yet welcoming, making it perfect for a meal. It’s not just about the food — the setting and guided experience made it feel carefully curated and unique. The wine cellar is a focus on local and regional Hungarian wines, which perfectly compliments the country. A special mention has to go to the desserts — absolutely exceptional and the perfect sweet finale to an already amazing meal. We would definitely recommend it!
Absolutely world-class! The level of this place is so impressive that for a moment, I felt like I was back in Moscow. I don't even know what else to say: everything here is simply top-notch. The menu, the presentation, the service, the atmosphere, and the cocktails — all of it was perfect. I had such a wonderful time, and I will definitely be back.
I recently attended a DiningCity event at Cut & Barrel Budapest, and the evening turned out to be truly memorable. Although I had originally booked a table for two, my sister fell ill at the last minute. I called the restaurant to ask if I could still attend alone, since the menu was designed for two people. The staff were incredibly kind and reassured me that I was welcome to come. That thoughtful gesture already set the tone for the evening. From the warm welcome at the entrance to the attentive service throughout the night, the hospitality was absolutely outstanding. The food itself was excellent, beautifully prepared, flavorful, and presented with care. The atmosphere added to the experience, creating a perfect balance of elegance and comfort. One of the highlights was having the chance to speak directly with the chef, who generously shared insights about his inspiration, the dishes, and the events hosted at the restaurant. This personal touch made the evening feel even more special. Overall, it was an amazing experience, one that left me not only impressed but also eager to return. I can easily see myself becoming a regular here.
I visited Cut&Barrel – Salumeria / Vineria during Fall Restaurant Week 2025, and it was a truly unforgettable experience. The atmosphere is the perfect mix of fancy and relaxed, making it ideal for both foodies and casual diners. The Restaurant Week menu was excellent, with every dish showing creativity and balance. My absolute favorite was the Muge, perfectly cooked steak—rich, juicy, and packed with flavor. For dessert, the Chajá, a traditional Uruguayan cake, was a beautiful surprise: light, creamy, and absolutely delicious. The service was top-notch, with friendly and attentive waiters who clearly knew the menu well. This place offers a unique gastronomic experience that feels both refined and welcoming. I’m already looking forward to going back. A must-visit if you appreciate great food and thoughtful details.
